In 1998, around 2,000 bottles of the 1907 Champagne Monopole Hiedsieck Diamant cuvee were recovered from a shipwreck in the Gulf of Finland. They were auctioned off as a novelty all around the world, but little did anyone know what a revelation this wine would be.
Tasted in Hong Kong, it was almost golden in colour and there was not a bubble in sight... and oh how delicious. The acidity was all there, and the flavours rich and round - the sea had preserved it beautifully!Tenuta del Paguro, whose estate is situated on the coast of Emilia-Romagna, is not only the most romantic wine ever produced, but also exquisite and refined in its taste. Aged for around a year 30 metres under the sea. The complete absence of UV rays, the difference in pressure, and the slow massage of the tides all combine to make this wine unique in both story and taste. Made from 100% Merlot, this wine is matured at 30 metres under the sea (yes!) in cages of 60/100 bottles each, and aged between 12 and 18 months at constant pressure and temperature, massaged by the undersea currents. Cabernet Sauvignon has been cultivated in this area for decades, producing incredible results. The wine is elegant with a floral bouquet that is charming and inviting, balanced by the small percentage of Merlot in the blend that adds fruityness and texture.

Albana is a grape originary of the Emilia-Romagna region, often used to make dessert wine, but few producers make a very fine dry version, and Tenuta del Paguro is among them. Very mineral, almost salty and extremely lingering on the palate, this wine is also pleasantly fruity.
DOCG* Certification: This classification denotes the highest quality recognition for Italian wines. In addition to the conditions required for DOC, the wines must be "guaranteed" by passing an analysis and a tasting by government-licensed personnel before being bottled. Also, DOCG rules reduce the allowable yield of grapes to produce the wine, limit specific alcohol levels, and minimum aging requirements.
