Finocchiona is one of the most loved among Tuscan pork products. Its name comes from "finocchio", or fennel, used to flavour the lean pork shoulder and cheek fat used in the sausages.
The Tuscan tradition combines finocchiona with salt-free bread. But it is also perfect with tasty focaccia, and a slice of fresh pecorino cheese, all accompanied by a good red wine such as Chianti. Delicious served hot on top of slices of polenta. In the cooked version, it goes very well with spinach, turnips and broad beans.
